After a brief cold maceration, the juice ferments at a controlled temperature of no more than 25o for 10 days to extract the varietal character but preserve the grapes’ aromatic features. Tasting Note: Maroon colour with a violet rim showing its youth. Aromas of fresh, red and black fruit, liquorice and floral notes. The taste is fresh and fruity, intense and moreish. Food Match: Ideal for a great variety of dishes such as cut meats, rice dishes, vegetables, cheeses, salads and stews Serres Tempranillo/Garnacha Rosado 2009 Variety: 80% Tempranillo and 20% Garnacha Vineyards: The Tempranillo and Garnacha grapes for this wine were sourced from a select group of growers around Haro who have long-term exclusive contracts with the winery. Vintage: Hand picked. 15th of October Vinification: Made in the traditional ‘sangrado’ style. The juice obtained from a gentle pressing of the grapes gets 10-12 hours of cold maceration on the skins. The gently coloured first-run juice is then fermented in stainless steel at a controlled temperature of between 13o - 15o to preserve the grapes’ aromatic characters. Tasting Note: Deep and bright reddish pink wine with aromas of raspberry, as well as hints of violet, candy and balsamic. Fresh, bright and crisp fruity taste Food Match: A great wine to appreciate on its own, but also a good contrast for charcuterie as well as lighter, summery dishes especially fish or vegetable based Serres Viura Blanco 2009 Variety: 100% Viura Vineyards: The Viura grapes for this wine were sourced from a select group of growers around Haro who have long-term exclusive contracts with the winery. The winery jointly manages the viticulture in these vineyards throughout the year to ensure maximum quality of fruit for these wines Vintage: Hand picked. 7th of October Vinification: After a brief whole berry cold maceration, the first-run juice is fermented in stainless steel at a controlled temperature of between 12o - 15o to preserve the Viura grapes’ varietal character. Tasting Note: Bright, pale yellow colour. Fresh aromas of apple and pineapple with subtle white floral characters. Fresh, fruity and lasting finish, a great balance between fruit and acidity in the mouth. Food Match: Match for fish, shellfish, smoked meats and many types of fresh and lightly aged cheeses Carlos Serres Old Vine Tempranillo 2007 Variety:100% Tempranillo Vineyards: The Tempranillo grapes for this wine were selected by the winemaker from their growers’ best sources of old vines, ones that are 50+ years old and in some of the best terroirs around Haro. Vintage: Hand picked 17th of October Vinification: Fermented in stainless steel after gentle destemming and pressing. After a brief cold maceration, the juice ferments at a controlled temperature of no more than 26o for 10 days. Ageing: The wine ages for 8 months in American and French oak barrels, then a further 6 months in bottle before release. Tasting Note: Bright, purple colour with aromas of fresh, red and black fruit, liquorice and vanilla notes. Dark fruit in the mouth which is intense and long, but also finishes with fresh acidity. Food Match: A great match for grilled vegetables, creamy rice dishes, pastas and pulses, white meats and soft or lightly aged cheeses Carlos Serres Crianza 2006 Variety: 85% Tempranillo and 15% Garnacha Vineyards: The Tempranillo and Garnacha grapes for this wine were sourced from the winery’s own vineyards and a select group of growers around Haro who have long-term exclusive contracts with the winery. The vineyards are on average 20 years old. Vintage: Hand picked. 16th (Tempranillo)/17th (Garnacha) of October Vinification: Fermented in small stainless steel vats. After destemming and gentle pressing, the juice get 6 days of maceration on the skins before fermenting for approximately 10 days at a maximum temperature of 28o. Ageing: 14 months in a combination of American and French oak barrels, then a minimum of 6 months ageing in bottle Tasting Note: Cherry red colour with brilliant purple rim. Aromas of mature red fruit with a core of spice and delicate liquorice hints. The wine is complex, well structured, fresh and fruity. Carlos Serres Reserva 2005 Variety: 90% Tempranillo and 10% Graciano Vineyards: All the Tempranillo and Graciano for this wine come from a selection of the different parcels of the Finca El Estanque vineyard, a 60-hectare vineyard owned by the winery in the best areas of Haro. The vines are 30 years old on average. Vintage: Hand picked. 20th (Tempranillo) and 29th (Graciano) October Vinification: Fermented in small stainless steel vats. After destemming and gentle pressing, the juice macerates on the skins before fermenting for approximately 13 days at a maximum temperature of 30oC. Ageing: 24 months in a combination of American and French oak barrels, then a minimum of 12 months ageing in bottle Tasting Note: Cherry red colour with thin terracotta edge showing its longer barrel age. Aromas of mature black fruit, toffee and balsamic as well as some mineral notes. This is a silky wine, but fresh and refreshing as well as elegant and persistent. Food Match: Perfect for matching any grilled meats, stews or barbequed meats. It also accompanies charcuterie, steaks and even game and stronger cheeses. |
